It all starts in the plantations...

Our tea is harvested in the mountainous region of Enshi, which has a temperate and misty climate, ideal for growing tea plants. Picking the leaves is a crucial step that affects the quality of the final tea. Typically, only the young leaves and buds are harvested, as they concentrate the essential aromas and nutrients. People in the mountainous areas have earned their living by picking tea for generations. They have become very skilled in the art of selecting the most tender tea leaves. The process is often done by hand to preserve the integrity of the leaf.

Harvest period: Harvesting takes place mainly in spring and early summer, when the leaves are at their peak freshness.

From leaves to tea...

Withering: Once picked, the leaves are transported to the processing location for the withering phase. This step consists of spreading the leaves in a ventilated environment to reduce their humidity level. Withering makes the leaves more flexible and facilitates the following steps, including rolling. Depending on the tea variety, this step can last from a few hours to an entire day.

Rolling: The leaves are then rolled manually to release their essential oils and natural enzymes, which contribute to the tea's aromas and color. This process breaks down the cell walls of the leaves, promoting oxidation.

Oxidation or Fixation: In this stage, the leaves undergo controlled oxidation, except in the case of green tea which is heated to prevent oxidation. In black teas and some oolong teas, oxidation is what gives the leaves their dark color and deep aromas. The process involves leaving the leaves out in the open in a controlled environment until they reach the desired color and flavor.

Drying: Once oxidation or fixation is complete, the tea leaves are dried to stop any enzymatic activity and reduce moisture to a minimum. This helps stabilize the leaves and preserve them for longer. Drying is done in an oven at a low temperature, this step is crucial to preserve the aromas and texture of the leaves.
